I don’t know about you, but I am so ready for summer! Pineapples and watermelons are all I can think about these days. So, I decided to create a delicious treat that merges both flavors into tropical magic! My pineapple watermelon popsicles are sweet and healthy. Bonus points for healthy 🙂 And they will keep you {and the minis} cool and trendy all summer long! On top of all that, they are so cute and easy to make. I promise they will be a hit at your summer pool party!
You will need:
1 Can Pineapple Juice
1 Medium Watermelon
Large Knife
Your favorite cookie cutter
1} Slice watermelon into steaks {1-2 inches thick}.
2} Use cookie cutter to cut watermelon shapes.
3} Place watermelon shapes into bowl + fill with pineapple juice. Allow to sit overnight {6-8 hours}.
4} Remove soaked watermelon + place on cookie sheet lined with parchment paper. Insert popsicle sticks or milk shake straws. Save pineapple watermelon juice because it’s yummers!!!
5} Place cookie sheet in freezer for 3-4 hours. And tada! Tropical magic! How cute is that popsicle?
In true party blogger fashion, I decided to have a Popsicle Party! Anagram Balloons has a great selection of balloons with summer vibes, so I grabbed a few just for the occasion.
My Taste Testers were so excited to dig in! My son said “it tastes like fruit punch” and my daughter didn’t say much, she just kept eating!
I am definitely adding this to my Sweet Summer recipe book. I hope you try this super easy + fun treat.
